Kale

* Kale is high in iron which is essential for good health. Iron helps the formation of hemoglobin and enzymes, transports oxygen to various parts of the body, promotes cell growth and helps the liver to function properly.

* High in vitamin K, Kale helps to protect against certain types of cancer. Vitamin K also helps to prevent blood clotting and promotes healthy bones. Increased levels of vitamin K can also help alzheimer's sufferers.

Celery

* The compound L-3-N-Butylphthalide found in celery helps to prevent plagues and tangles of the brain that can cause Alzheimer's disease. This compound is also helpful to prevent urinary tract infections because of its diuretic properties.

* Studies show that celery oil, when used on the skin, repels mosquitos, with no side effects.

Cucumber

* With 96% water, cucumbers help to hydrate the body, regulate body temperature and helps to flush toxins from the body

* Cucumbers are good for skin care because of the high water content, vitamins A, B and C and minerals such as potassium, magnesium and silica. Cucumber facial masks help to tighten the skin, whilst the ascorbic and caffeic acid can reduce water retention that causes swelling and puffiness under the eyes. The skin of the cucumber can also offer relief from sunburn or windburn.

Pineapple

Pineapples are rich in an antioxidant called beta carotene, which is converted to vitamin A in the body. This antioxidant helps to lower the risk of an eye disease called macular degeneration (which is damage to the retina), by as much as 36%.
